Waterford Distillery Ballykilcavan Edition 1.1 Irish Single Malt Whisky, 50% ABV (6 x 70CL)
Using 100% Irish malted barley, Waterford’s Single Farm Origin series is an uber-provenance range of limited edition natural whiskies that explore Irish “teireoir” – one farm, one place at a time. No colouring, chill-filtration or additives are used whilst long fermentation and slow distillations have created an impactful flavour.
The first release from Ballykilcavan was distilled from barely grown by David Walsh-Kemmis in the Irish barley heartlands to the west of The Barrow in Co. Laois. His fertile fields are sheltered by ancient woodland on some of the best soil in the region. For maturation 45% of the casks were first-fill American oak, 28% were French oak and 27% of the casks were reviously used to age vin doux naturel (fortified wines).
A light hay and very oily appearance. Berries with fresh foliage, redcurrants and grapes first welcome the nose with a vibrant, freshly cut grass aroma. Cooked bananas with brown sugar and plenty of heat greet the palate with mulled wine and cinnamon coming through. A dry, oily lasting finish.
