Domaine Paul Pillot
Founded in 1900 by Jean-Baptiste Pillot, it is now run by fourth generation Thierry and his sister Chrystelle, who farm 13 hectares in Chassagne, Santenay and St. Aubin. Oak use is minimal and the wines have a fine freshness and discreet power to them. This 12-hectare domaine is one of the top properties in the Côte de Beaune. Thierry Pillot has been responsible for the viticulture and vinification since 2004, and farms organically but without certification. He has extended the leverage to 18 months on lees, but with modest percentages of new oak and no lees stirring. Thierry explained that the most important factor in 2018 was to find balance, and with regards to picking, “It’s not about being early or late, it’s about finding the right moment.”
