Domaine du Salvard
This 16 hectare domaine has been cultivated by the Delaille family since the 1930s. As with Touraine, the greatest problem is to attain full ripeness in the grapes. Yields here are kept deliberately low to ensure there are no green flavours in the wine. Grassy and pungent, this Sauvignon nonetheless has a core of ripe whitecurrant fruit and the addition of 15% Chardonnay bestows it with a creamy textured finish. With the price of Sancerre climbing ever higher, this wine, which could easily pass for its more illustrious cousin, seems better value each vintage.
