Domaine Daniel Etienne Defaix

Daniel-Etienne Defaix is one of the oldest domaines in Chablis; they can trace their origins back to the 13th Century and have been producing Chablis since the 18th Century. Daniel-Etienne is one of the few producers today still to make Chablis as his ancestors did: keeping the wines in tank for extended ageing on lees, bottling late, and only releasing wines when they are ready to drink. Today, Daniel-Etienne is ably assisted by his son Paul, who represents the 15th generation of the Defaix family.
