Cavicchioli e Figli
Founded in the 1970s by Guiseppe Bellei, this Modena producer is now under the control of the legendary Cavicchioli family. With just five hectares and a 5000 case production, as well as producing Lambrusco, the winery also makes Metodo Clasico wines from Pinot Noir and Chardonnay and in the last 15 years has been a pioneer of the ‘ancestrale’ method of making Lambrusco, with the second fermentation taking place in bottle and no subsequent filtration.
