Castellari di Castellina
This 80 hectare estate has been owned by Paolo Penerai since the late 1970’s and makes a range of highly reputed wines from 33 hectares of vineyard, along with olive oil from 12 hectares of olive trees. No chemical treatments are used in the vineyard and Paolo has banned hunting on the estate, which has seen a return of a great diversity of wildlife to the woods. The Vin Santo is a gem, made from 60% Malvasia and 40% Trebbiano Toscana, air dried to concentrate the sugars and then aged 5 years in old oak and chestnut barrels.
