Distilled 03/07/2007, bottled 31/07/2024. Full maturation in Refill Sherry Hogshead. 238 bottles produced. Amber. A big, fat sherry nose showing an alluring combination of barley sugars, chestnut honey, chocolate malt, some orange peel and Seville orange marmalade. There are also touches of more savoury elements such as beef stock and beef fat, maggi and white miso paste. Some clove and other baking spices, along with an underlying vibrant orchard fruit character, mainly on quince. With water: lifted, more of the refill sherry character coming through, stollen, roasted almonds, then bright barley sugar, honeys, quince, pear and toffee apple. In the mouth, it is rich with a strong attack, with more chocolate malt, Seville orange marmalade, touches of coffee and figs rolls. Quite textural and, with the strong ABV of 62.7%, quite intense, but showing the hallmarks of Glenfarclas' direct-fired new make. With water: sweet, with layers of spice, honey and barley sugar again. A fattiness is present, showing beef stock, along with more drying spices, hessian, walnuts and pencil shavings. It combines good quality Oloroso sherry richness with the vibrant green apple freshness found in Glenfarclas new make.
