Restrained style with lovely fresh citrus notes, red apples and a hint of oak spice. There are additional touches of oyster shell, vibrant minerality and a touch of honeycomb on the nose, leading to a very energetic palate, with notes of orchard fruits and a touche of florality.
Our thoughts
Like many Burgundy domaines, the Chavy holdings date back centuries, but only in recent times, under Gérard Chavy, have the family made their own wines, rather than selling the grapes. When Gérard’s two sons came along, the holdings were split, with Jean-Louis creating a new, purpose-built winery in the heart of Puligny-Montrachet, where he crafts wines with notable minerality and fruit purity – this 2022 rendering being a textbook example, fermented in 15% new oak with indigenous yeasts.
