Dom Pérignon only make Vintage Champagne which they don’t release until their Chef de Cave Vincent Chaperon believes the Champagne has reached a peak or as the maison like to call it, a ‘Plénitude’.

During Dom Pérignon’s life-cycle there are three Plénitudes. The first one comes after the Champagne has aged on its lees in the cellars for at least eight years, the second Plénitude  comes after at least fifteen years’ ageing, and the third Plénitude is only released when the Champagne has been on its lees in the cellars for at least 25 to 30 years.

The Vintage 2003 Plénitude 2 doesn’t disappoint. At 18 years this Champagne offers an impressive bouquet of orchard fruits and warm toasty and smoky notes. A very nuanced and challenging vintage, it has great persistence and abundant charm.
