A perennial favourite of Jeroboams, Bollinger, founded in 1829 is still a family owned company. They own 163 hectares of vineyards, which supply 60% of their needs. This is unusual in champagne and allows for the great consistency that Bollinger champagnes show from year to year. 80% of the grapes come from premier and grand cru vineyards, with only the best quality, first pressings used. The wines are fermented in wood, a practice that has almost died out, but which gives much to the distinctive house style.
